Exceptional rich floral aromas of Ecuador
Cocoa is the heart of Ecuador. Its prized ‘Nacional’ variety has grown there for over 5,000 years and was one of the first cacao trees to be cultivated. With a floral aroma and complex flavour profile it is no wonder that it was one European chocolatiers’ most coveted luxury items in the 18th and 19th centuries.
We mainly use Nacional cacao, renown for its delicate floral notes of Jasmine, or Arriba, Spanish for ‘at the top’. Nacional cocoa uplifts you to an upper taste level. We especially use beans from Los Ríos and Esmeraldas, known for its incredible floral notes. Esmeraldas cocoa is powerful, while Los Rios cocoa is somewhat less intense and has a subtle earthy essence.
